Ingredients

  • 4 large russet potatoes, peeled and diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 4 slices of bacon, cooked and crumbled
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion and garlic until translucent.
  2. Add the diced potatoes and broth, bringing to a boil.
  3. Reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  4. Use a potato masher to mash some of the potatoes for a creamy texture.
