Couscous Vegetable Salad

A refreshing and healthy couscous vegetable salad perfect for a light lunch or side dish.

Ingredients

  • 1 cup couscous
  • 1 1/4 cups boiling water
  • 1/2 tsp salt
  • 1 tbsp olive oil
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup chopped parsley
  • 1/4 cup chopped mint
  • 2 tbsp lemon juice
  • 1 clove garlic, minced
  • 1/2 tsp ground cumin

Instructions

  1. Place couscous in a bowl and pour boiling water over it. Cover and let sit for 5 minutes.
  2. Fluff couscous with a fork and let cool.
  3. Add olive oil, cucumber, bell pepper, red onion, parsley, and mint to the couscous.
  4. In a small bowl, whisk together lemon juice, garlic, and cumin.
  5. Pour dressing over the salad and toss to combine.
  6. Chill for 30 minutes before serving.

Notes

  • Use whole wheat couscous for extra fiber.
  • Add feta cheese for extra flavor if desired.
  • Store leftovers in an airtight container for up to 3 days.
