Creamy Cowboy Butter Chicken Pasta – Dinner ($9.82 Total)
Bring a large pot of salted water to a boil. Cook linguine until al dente. Drain and set aside, reserving 1/4 cup of pasta water.
Heat olive oil in a large skillet over medium-high heat. Add chicken and season with paprika, garlic salt, kosher salt, and black pepper. Sear until golden, about 3–4 minutes.
Add 2 tablespoons of melted butter. Flip chicken and cook until done, another 3–4 minutes. Remove chicken and set aside.
Reduce heat to medium. Add remaining melted butter, heavy cream, garlic salt, red pepper flakes, cayenne pepper, and Dijon mustard. Stir and simmer until slightly thickened.
Return chicken and cooked linguine to skillet. Add reserved pasta water. Toss to coat evenly.
Stir in lemon juice. Garnish with fresh parsley and serve hot with lemon slices, if desired.
Adjust cayenne and red pepper flakes based on desired spice level.
Use whole wheat linguine or gluten-free pasta if preferred.
To reheat, add a splash of water or cream in a skillet over medium heat.
Pairs well with crusty bread or a green salad.
