Cranberry Orange Bread

  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 3/4 cup orange juice
  • 1/4 cup vegetable oil
  • 1 tablespoon orange zest
  • 1 cup fresh or frozen cranberries

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a large bowl, mix flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk egg, orange juice, oil, and orange zest.
  4. Combine wet and dry ingredients, stirring until just moistened.
  5. Fold in cranberries.
  6. Pour batter into the prepared pan.
  7. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  8. Cool in pan for 10 minutes, then transfer to a wire rack.

Notes

  • Use fresh cranberries for best texture.
