Creamy Avocado Pasta

A quick and creamy avocado pasta sauce that’s rich, flavorful, and ready in minutes.

Ingredients

  • 2 ripe avocados
  • 1/2 cup fresh basil leaves
  • 2 cloves garlic
  • 2 tbsp lemon juice
  • 1/4 cup olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 12 oz pasta
  • 1/4 cup grated parmesan cheese (optional)

Instructions

  1. Cook pasta according to package instructions.
  2. While pasta cooks, blend avocados, basil, garlic, lemon juice, olive oil, salt, and pepper until smooth.
  3. Drain pasta and return to the pot.
  4. Toss pasta with avocado sauce until evenly coated.
  5. Top with parmesan cheese if desired.
