  • 2 cups broccoli florets
  • 2 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent.
  2. Add diced potatoes and broccoli florets to the pot.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer until the vegetables are tender.
  4. Using an immersion blender, blend the soup until smooth.
  5. Stir in the heavy cream and season with salt and pepper. Heat through before serving.
