  • 8 oz pasta (penne or fusilli)
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp nutmeg
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F. Toss butternut squash with olive oil, salt, and pepper. Roast for 25 minutes.
  2. Cook pasta according to package instructions. Drain and set aside.
  3. Blend roasted squash with garlic, cream, Parmesan, and nutmeg until smooth.
