1 package cauliflower gnocchi (16 oz)
1 cup raw cashews, soaked
1 cup unsweetened almond milk
2 cloves garlic
1 tbsp nutritional yeast
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil
Fresh parsley (optional garnish)
Instructions
Cook cauliflower gnocchi according to package instructions.
Drain soaked cashews and blend with almond milk, garlic, nutritional yeast, salt, and pepper until smooth.
Heat olive oil in a pan over medium heat.
Add cooked gnocchi and sauté for 2 minutes.
Pour cashew cream sauce over gnocchi and stir well.
Cook for another 2 minutes until sauce thickens.
Garnish with fresh parsley if desired.
Notes
Soak cashews for at least 2 hours for smoother blending.
Adjust salt and pepper to taste.
Store leftovers in an airtight container for up to 3 days.
