Creamy Chicken Enchiladas

A delicious and easy recipe for creamy chicken enchiladas.

  • 2 cups cooked chicken, shredded
  • 1 cup sour cream
  • 1 cup shredded cheese
  • 1 can (10 oz) enchilada sauce
  • 8 flour tortillas
  • 1/2 cup chopped onions
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 350°F.
  2. Mix shredded chicken, sour cream, half the cheese, onions, garlic powder, cumin, salt, and pepper in a bowl.
  3. Spoon the mixture evenly onto each tortilla and roll tightly.
  4. Place rolled tortillas seam-side down in a baking dish.
  5. Pour enchilada sauce over the tortillas.
  6. Sprinkle remaining cheese on top.
  7. Bake for 20 minutes or until cheese melts.
