Creamy Coconut Curry Chicken Bowl

  • 2 boneless chicken breasts, cubed
  • 1 can coconut milk
  • 1 tbsp curry powder
  • 1 tsp turmeric
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 1 bell pepper, sliced
  • 1 cup spinach
  • 1 tbsp olive oil
  • Salt to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add onion, garlic, and ginger. Cook until soft.
  3. Add chicken and cook until browned.
  4. Stir in curry powder and turmeric.
  5. Pour in coconut milk and simmer for 10 minutes.
  6. Add bell pepper and spinach. Cook for 5 more minutes.
