Creamy Garlic Chicken with Zucchini Noodles in 25 Minutes

A quick and healthy dish featuring tender chicken and zucchini noodles in a creamy garlic sauce.

  • 2 boneless, skinless chicken breasts, sliced
  • 2 medium zucchinis, spiralized
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken and cook until no longer pink, about 5-6 minutes per side. Remove and set aside.
  3. In the same skillet, add garlic and sauté for 30 seconds until fragrant.
  4. Pour in heavy cream and bring to a simmer.
  5. Stir in Parmesan cheese until melted and smooth.
  6. Add zucchini noodles and toss to coat in the sauce. Cook for 2-3 minutes until tender.
  7. Return chicken to the skillet and mix well.
  8. Season with salt, pepper, and red pepper flakes if using.
  9. Garnish with fresh parsley before serving.

Notes

  • For a dairy-free version, use coconut cream instead of heavy cream.
  • Spiralize zucchini just before cooking to prevent excess moisture.
  • Adjust seasoning to taste.
