  • 4 tbsp unsalted butter
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1/4 cup tomato paste
  • 1/4 cup brandy
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and black pepper to taste
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Cook the lobsters in boiling water for 8-10 minutes. Remove meat and reserve shells.
  2. Melt butter in a large pot over medium heat. Add onion, carrots, celery, and garlic. Cook until softened.
  3. Add lobster shells and tomato paste. Stir for 2 minutes.
  4. Pour in brandy and let it reduce slightly.
  5. Add seafood stock, paprika, and cayenne. Simmer for 30 minutes.
  6. Strain the broth and return to the pot. Discard solids.
  7. Add lobster meat and heavy cream. Simmer for 5 minutes.
  8. Season with salt and black pepper. Garnish with parsley before serving.
