Creamy Mushroom Orzo

Ingredients

  • 1 cup orzo pasta
  • 2 cups mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 cup vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup grated parmesan cheese
  • Salt and pepper to taste
  • 1 tbsp chopped parsley

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add mushrooms and sauté until golden brown.
  3. Add garlic and cook for 1 minute.
  4. Stir in orzo and coat with oil.
  5. Pour in vegetable broth and bring to a simmer.
  6. Cook until orzo is tender and liquid is absorbed.
  7. Reduce heat and stir in heavy cream and parmesan.
  8. Season with salt and pepper.
  9. Garnish with parsley before serving.

Notes

  • Use shiitake or cremini mushrooms for deeper flavor.
  • Substitute half-and-half if heavy cream is unavailable.
  • Add a splash of white wine for extra richness.
