Creamy Mushroom & Spinach Tortilla Melt

A delicious and easy-to-make creamy mushroom and spinach tortilla melt. Perfect for a quick lunch or dinner.

  • 2 large flour tortillas
  • 1 cup sliced mushrooms
  • 1 cup fresh spinach
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 2 tbsp cream cheese
  • 1 tbsp olive oil
  • 1/4 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add mushrooms and sauté for 3-4 minutes until softened.
  3. Add spinach and cook until wilted, about 2 minutes.
  4. Stir in cream cheese, garlic powder, salt, and pepper. Mix well.
  5. Place one tortilla on a clean surface and spread the mushroom-spinach mixture evenly.
  6. Sprinkle shredded cheese on top.
  7. Cover with the second tortilla.
  8. Heat a pan over medium heat and cook the tortilla melt for 2-3 minutes per side until golden and crispy.
  9. Slice and serve warm.

Notes

  • Use gluten-free tortillas if needed.
  • Add a pinch of red pepper flakes for extra heat.
  • Store leftovers in an airtight container for up to 2 days.
