A quick and easy creamy pesto salmon skillet that’s packed with flavor. Perfect for a weeknight dinner.

Ingredients

  • 2 salmon fillets (6 oz each)
  • 1 tbsp olive oil
  • 1/4 cup heavy cream
  • 2 tbsp pesto
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup grated parmesan
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season salmon with salt, pepper, and garlic powder.
  3. Cook salmon for 4-5 minutes per side, then remove from skillet.
  4. In the same skillet, add heavy cream and pesto. Stir until combined.
  5. Add cherry tomatoes and cook for 2 minutes.
  6. Return salmon to the skillet and sprinkle with parmesan.
  7. Cover and cook for 2 minutes until cheese melts.
  8. Serve immediately.
