  • 6 tablespoons melted butter
  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup pumpkin puree
  • 1 teaspoon pumpkin pie spice

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Mix graham cracker crumbs, sugar, cinnamon, and melted butter. Press into a 9-inch springform pan.
  3. Bake crust for 10 minutes, then let cool.
  4. Beat cream cheese, sugar, and vanilla until smooth.
  5. Add eggs one at a time, mixing well after each.
  6. Stir in pumpkin puree and pumpkin pie spice.
  7. Pour filling over crust and bake for 50-60 minutes until set.
  8. Let cool, then refrigerate for at least 4 hours before serving.
