A delicious and creamy pasta dish featuring roasted red peppers for a rich, smoky flavor.

  • 12 oz pasta (penne or fusilli)
  • 2 large red bell peppers, roasted
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • Fresh basil for garnish

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Roast red peppers until charred, then peel and blend into a smooth puree.
  3. Heat olive oil in a pan, sauté garlic until fragrant.
  4. Add red pepper puree, heavy cream, salt, black pepper, and red pepper flakes. Simmer for 5 minutes.
  5. Stir in Parmesan cheese until melted.
  6. Toss cooked pasta in the sauce until well coated.
  7. Garnish with fresh basil and serve hot.
