  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef over medium heat.
  2. Add the chopped onion and minced garlic, cooking until the onion is translucent.
  3. Stir in the black beans, corn, diced tomatoes, taco seasoning, and chicken broth.
  4. Bring the mixture to a boil, then reduce heat and simmer for 15 minutes.
  5. Stir in the heavy cream and shredded cheese until melted and combined.
  6. Season with salt and pepper to taste.
