  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper, then add them to the skillet.
  3. Cook the chicken for about 6-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
  4. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  5. Add sun-dried tomatoes and Italian seasoning, stirring to combine.
  6. Pour in the chicken broth and heavy cream, bringing the mixture to a simmer.
  7. Add the spinach and cook until wilted.
  8. Return the chicken to the skillet, coating it in the creamy sauce.
  9. Garnish with Parmesan cheese before serving.
