  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 2 cups fresh spinach
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika
  • 1/4 cup grated parmesan cheese

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season chicken with salt, pepper, and paprika, then cook until browned (5-6 minutes per side). Remove and set aside.
  3. In the same skillet, sauté garlic for 30 seconds.
  4. Add sun-dried tomatoes, heavy cream, and chicken broth. Stir well.
  5. Simmer for 3-4 minutes until slightly thickened.
  6. Stir in spinach and cook until wilted (1-2 minutes).
  7. Return chicken to the skillet and sprinkle with parmesan cheese.
  8. Cook for another 2-3 minutes until heated through.

Notes

  • For extra flavor, add 1/4 tsp of Italian seasoning.
  • Substitute half-and-half for heavy cream if you prefer a lighter sauce.
  • Serve over pasta or mashed potatoes.
