Zucchini Fritters

Crispy and flavorful zucchini fritters made with fresh zucchini, herbs, and a light batter. Perfect as a snack or side dish.

Ingredients

Scale
  • 2 medium zucchinis, grated
  • 1/2 teaspoon salt
  • 1/4 cup all-purpose flour

  • 1 clove garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Grate the zucchini and place in a colander. Sprinkle with salt and let sit for 10 minutes to drain excess moisture.
  2. Squeeze the zucchini with your hands or a clean towel to remove as much liquid as possible.
  3. In a bowl, mix the zucchini, flour, egg, Parmesan, garlic, parsley, and black pepper.
  4. Heat olive oil in a skillet over medium heat.
  5. Scoop about 2 tablespoons of the mixture per fritter and flatten slightly in the skillet.
  6. Cook for 3-4 minutes per side until golden brown.
  7. Transfer to a paper towel-lined plate to drain excess oil.
  8. Serve warm.
