Crockpot Chicken Pot Pie Soup

A hearty and comforting soup that combines the flavors of a classic chicken pot pie in an easy-to-make crockpot recipe.

  • 2 cups cooked chicken, shredded
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup frozen mixed vegetables
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 cup all-purpose flour
  • Salt and pepper to taste

Instructions

  1. Place chicken, broth, vegetables, onion, garlic, thyme, and rosemary in the crockpot.
  2. Cover and cook on low for 6 hours or high for 3 hours.
  3. In a small bowl, mix flour with 1/4 cup of heavy cream until smooth. Stir into the soup.
  4. Add the remaining heavy cream and cook for an additional 30 minutes.
  5. Season with salt and pepper to taste before serving.

Notes

  • You can use rotisserie chicken for added convenience.
  • Adjust the thickness of the soup by adding more or less flour.
