Crockpot Chili Mac

A hearty and easy one-pot meal combining chili and macaroni for a comforting dish.

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 cups beef broth
  • 2 cups elbow macaroni
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain excess fat.
  2. Add onion, garlic, and bell pepper. Cook until softened.
  3. Transfer the mixture to a crockpot.
  4. Add diced tomatoes, tomato sauce, kidney beans, beef broth, macaroni, chili powder, cumin, paprika, salt, and pepper. Stir well.
  5. Cover and cook on low for 4-5 hours or high for 2-3 hours, stirring occasionally.
  6. Stir in cheddar cheese before serving.

Notes

  • Adjust spices to your taste.
  • For a spicier dish, add diced jalapeños.
  • Store leftovers in an airtight container for up to 3 days.
