Crockpot Fall Harvest Stew

  • 1 lb beef stew meat, cubed
  • 2 cups butternut squash, cubed
  • 1 cup carrots, sliced
  • 1 cup potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat. Brown the beef stew meat on all sides.
  2. Transfer the beef to the crockpot.
  3. Add butternut squash, carrots, potatoes, onion, and garlic to the crockpot.
  4. Pour in beef broth and add thyme, rosemary, salt, and pepper.
  5. Stir to combine all ingredients.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  7. Serve hot.
