  • 2 lbs boneless, skinless chicken breasts
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup low-fat cream cheese
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • Fresh cilantro for garnish

Instructions

  1. Place the chicken breasts in the bottom of the crockpot.
  2. Add the black beans, corn, diced tomatoes, and taco seasoning on top of the chicken.
  3. Pour the chicken broth over the mixture.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving, add the cream cheese and cheddar cheese to the crockpot.
  6. Stir until the cheeses are melted and well combined.
  7. Serve hot, garnished with fresh cilantro.

Notes

  • For a spicier dish, add jalapeños or use spicy taco seasoning.
  • This dish can be served over rice or with tortillas.
  • Leftovers can be stored in the refrigerator for up to 3 days.
