Crockpot Lasagna Soup

A hearty and comforting soup that combines the flavors of traditional lasagna with the ease of a slow cooker.

  • 1 lb ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 (24 oz) jar marinara sauce
  • 4 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 8 lasagna noodles, broken into pieces
  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp grated Parmesan cheese
  • Fresh basil for garnish (optional)

Instructions

  1. Brown the ground beef, onion, and garlic in a skillet over medium heat. Drain excess fat.
  2. Transfer the beef mixture to a crockpot.
  3. Add marinara sauce, chicken broth, diced tomatoes, Italian seasoning, salt, and pepper to the crockpot. Stir well.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  5. Add broken lasagna noodles during the last 30 minutes of cooking.
  6. In a small bowl, mix ricotta, mozzarella, and Parmesan cheese.
  7. Serve the soup hot, topped with a dollop of the cheese mixture and fresh basil if desired.

Notes

  • You can substitute ground turkey for ground beef.
  • For a vegetarian version, omit the meat and use vegetable broth.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
