A creamy lemon chicken dish without dairy, perfect for those avoiding lactose or preferring a lighter option.

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 cup coconut milk
  • 2 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp cornstarch (optional, for thickening)
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add chicken breasts and cook for 6-7 minutes per side until golden.
  3. Remove chicken and set aside.
  4. In the same pan, add coconut milk, lemon juice, garlic powder, onion powder, salt, and pepper.
  5. Simmer for 3-4 minutes, stirring occasionally.
  6. If needed, mix cornstarch with a little water and add to thicken the sauce.
  7. Return chicken to the pan and coat with the sauce.
  8. Garnish with fresh parsley before serving.
