Dairy free mango coconut chia pudding

A creamy and refreshing dairy-free pudding made with mango, coconut milk, and chia seeds.

Ingredients

  • 1 ripe mango, peeled and diced
  • 1 cup coconut milk
  • 3 tbsp chia seeds
  • 1 tbsp maple syrup (optional)
  • 1 tsp vanilla extract
  • Shredded coconut for garnish (optional)

Instructions

  1. Blend mango until smooth.
  2. Mix mango puree with coconut milk, chia seeds, maple syrup, and vanilla extract.
  3. Stir well and refrigerate for at least 4 hours or overnight.
  4. Stir again before serving and top with shredded coconut if desired.

Notes

  • Adjust sweetness with more or less maple syrup.
  • For a thicker pudding, add more chia seeds.
  • Best enjoyed chilled.
