  • 1 cup pitted dates
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/2 cup chopped nuts (walnuts or almonds)
  • 1/2 cup dried fruit (raisins or cranberries)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a food processor, blend the pitted dates until they form a paste.
  3. In a large bowl, combine the rolled oats, almond butter, honey or maple syrup, chopped nuts, dried fruit, vanilla extract, salt, and cinnamon.
  4. Add the date paste to the mixture and stir until well combined.
  5. Press the mixture evenly into the prepared baking dish.
  6. Bake for 20-25 minutes or until the edges are golden brown.
  7. Allow to cool completely before cutting into bars.
