  • 3 ripe bananas
  • 2 cups whole wheat flour
  • 1/2 cup unsweetened applesauce
  • 1/4 cup almond milk
  • 1/4 cup chopped walnuts (optional)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the unsweetened applesauce, almond milk, and vanilla extract to the mashed bananas and mix well.
  4. In another bowl, combine the whole wheat flour, baking soda, baking powder, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. If using, fold in the chopped walnuts.
  7. Pour the batter into a greased loaf pan.
  8. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • Make sure the bananas are very ripe for the best sweetness.
  • This bread can be stored in an airtight container for up to 5 days.
  • For added flavor, consider adding a handful of dark chocolate chips (sugar-free) or dried fruits.
