30-Minute Cauliflower Fried Rice That Tastes Like Takeout

Cauliflower Fried Rice

A healthy, low-carb alternative to traditional fried rice made with cauliflower, vegetables, and your choice of protein.

Ingredients

  • 1 medium head of cauliflower, grated or riced
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 carrot, diced
  • 1/2 cup frozen peas
  • 2 eggs, beaten (optional)
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Instructions

  1. Grate the cauliflower or pulse in a food processor until it resembles rice.
  2. Heat oil in a large pan over medium heat.
  3. Add garlic, onion, and carrot. Cook for 3-4 minutes.
  4. Add peas and cook for another 2 minutes.
  5. Push vegetables to one side of the pan. Pour beaten eggs into the empty space and scramble.
  6. Add riced cauliflower and stir everything together.
  7. Pour soy sauce and sesame oil over the mixture. Stir to combine.
  8. Cook for 5-7 minutes, stirring occasionally.
  9. Season with salt and pepper. Garnish with green onions if desired.
  10. Serve hot.

Notes

  • For extra protein, add cooked chicken, shrimp, or tofu.
  • Use tamari instead of soy sauce for a gluten-free option.
  • Store leftovers in an airtight container for up to 3 days.
