Easy Chicken Parm Sandwich for a Busy Weeknight

  • 2 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 4 slices mozzarella cheese
  • 4 sandwich rolls
  • Olive oil for frying
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper.
  3. In a bowl, mix breadcrumbs and Parmesan cheese.
  4. Dredge the chicken breasts in the breadcrumb mixture.
  5. Heat olive oil in a skillet over medium heat and cook the chicken until golden brown on both sides.
  6. Transfer the chicken to a baking dish, top with marinara sauce and mozzarella cheese.
  7. Bake in the oven for 15-20 minutes until the cheese is melted and bubbly.
  8. Toast the sandwich rolls and assemble the sandwiches with the chicken.
