Easy Enchilada Recipes the Whole Family Will Ask For Again

  • 10 corn tortillas
  • 2 cups shredded chicken
  • 1 can (10 oz) enchilada sauce
  • 1 cup shredded cheese
  • 1/2 cup chopped onions
  • 1/2 cup sour cream
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and sauté onions until translucent.
  3. Add shredded chicken, cumin, chili powder, salt, and pepper to the skillet and mix well.
  4. Warm the corn tortillas in a separate pan or microwave until pliable.
  5. Spread a small amount of enchilada sauce on the bottom of a baking dish.
  6. Fill each tortilla with the chicken mixture, roll them up, and place seam-side down in the baking dish.
  7. Pour the remaining enchilada sauce over the rolled tortillas.
  8. Sprinkle shredded cheese on top.
  9. Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
  10. Serve hot with sour cream on the side.

Notes

  • Feel free to customize the filling with beans or vegetables for a vegetarian option.
  • These enchiladas can be made ahead of time and stored in the refrigerator before baking.
  • Top with fresh cilantro for added flavor.
