Instructions

  1. Preheat oven to 200°F (95°C) and line a baking sheet with parchment paper.
  2. In a clean, dry bowl, beat egg whites and cream of tartar until soft peaks form.
  3. Gradually add sugar, 1 tablespoon at a time, while continuing to beat until stiff peaks form.
  4. Gently fold in vanilla extract.
  5. Transfer meringue to a piping bag fitted with a round tip.
  6. Pipe ghost shapes onto the prepared baking sheet, leaving space between each.
  7. Bake for 1.5 to 2 hours, until meringues are dry and crisp.
  8. Turn off the oven and let meringues cool inside for 1 hour.
  9. Use black icing gel or melted chocolate to draw ghost faces.
  10. Store in an airtight container.
