  • 1 lemon, juiced
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and water, bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
  4. Fluff quinoa with a fork and let it cool.
  5. In a large bowl, combine cooled quinoa, olive oil, cherry tomatoes, cucumber, bell pepper, parsley, lemon juice, salt, and pepper.
  6. Toss to combine and serve chilled or at room temperature.
