  • 2 tbsp powdered erythritol
  • 24 oz cream cheese, softened
  • 3/4 cup powdered erythritol
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Mix almond flour, melted butter, and 2 tbsp erythritol for the crust.
  3. Press crust mixture into a greased 9-inch springform pan.
  4. Bake crust for 10 minutes, then cool.
  5. Beat cream cheese and 3/4 cup erythritol until smooth.
  6. Add eggs one at a time, mixing well after each.
  7. Stir in vanilla and sour cream.
  8. Pour filling over crust and bake for 45-50 minutes.
  9. Turn off oven, leave cheesecake inside for 1 hour.
  10. Chill for at least 4 hours before serving.
