Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix shredded coconut, coconut flour, erythritol, and salt in a bowl.
  3. Add melted coconut oil and vanilla extract. Stir well.
  4. Beat egg whites until stiff peaks form. Fold into coconut mixture.
  5. Scoop tablespoon-sized portions onto the baking sheet.
