A comforting twist on classic lasagna, this soup combines rich tomato broth, tender pasta, and layers of cheese for a hearty meal.

Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 4 cups chicken broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 8 lasagna noodles, broken into pieces
  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp grated parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a large pot over medium heat. Drain fat.
  2. Add onion and garlic. Cook until softened.
  3. Stir in crushed tomatoes, broth, basil, and oregano. Simmer for 15 minutes.
  4. Add broken lasagna noodles. Cook until tender.
  5. Season with salt and pepper.
  6. Serve with dollops of ricotta, mozzarella, and parmesan.

Notes

  • Use whole wheat lasagna noodles for extra fiber.
