Lasagna soup takes all of the best qualities of lasagna and transforms them into a delicious soup. It has layers of flavor with rich tomato broth, tender pasta, and melty cheese.

  • 1 lb ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 4 cups chicken broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp grated parmesan cheese

Instructions

  1. Brown the ground beef in a large pot over medium heat.
  2. Add the onion and garlic, cooking until softened.
  3. Stir in the crushed tomatoes, chicken broth, basil, oregano, salt, and pepper.
  4. Bring to a boil, then add the broken lasagna noodles.
  5. Reduce heat and simmer for 15 minutes, or until noodles are tender.
  6. Serve hot, topped with ricotta, mozzarella, and parmesan cheese.

Notes

  • Use Italian sausage instead of ground beef for extra flavor.
  • Top with fresh basil for garnish if desired.
  • Store leftovers in the refrigerator for up to 3 days.
