Easy Rotisserie Chicken Shepherd’s Pie

A simple and delicious shepherd’s pie made with rotisserie chicken, perfect for a quick weeknight dinner.

  • 2 cups rotisserie chicken, shredded
  • 1 cup frozen mixed vegetables
  • 1 cup chicken broth
  • 1 cup mashed potatoes
  • 1/2 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and add the shredded rotisserie chicken.
  3. Add the frozen mixed vegetables, chicken broth, garlic powder, onion powder, salt, and pepper. Stir to combine and cook for about 5 minutes.
  4. Transfer the chicken mixture to a baking dish.
  5. Spread the mashed potatoes evenly over the chicken mixture.
  6. Sprinkle shredded cheddar cheese on top of the mashed potatoes.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  8. Let it cool for a few minutes before serving.

  • Feel free to use any leftover vegetables you have on hand.
  • This dish can be made ahead of time and stored in the refrigerator.
