Easy Slow Cooker Beef Manhattan

A simple and delicious recipe for making Beef Manhattan in a slow cooker, perfect for busy weeknights.

  • 2 pounds beef chuck roast
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 cup cornstarch
  • 1/4 cup water
  • 4 slices of bread
  • 1 cup mashed potatoes (optional)

Instructions

  1. Place the beef chuck roast in the slow cooker.
  2. Add chopped onion, minced garlic, beef broth, Worcestershire sauce, salt, pepper, and thyme.
  3. Cover and cook on low for 8 hours or high for 4 hours until the beef is tender.
  4. Remove the beef and shred it with two forks.
  5. Mix cornstarch and water in a small bowl, then stir into the slow cooker to thicken the sauce.
  6. Return the shredded beef to the slow cooker and mix well.
  7. Serve the beef mixture on slices of bread, topped with mashed potatoes if desired.
