  • 2 cups fresh spinach, chopped
  • 4 large eggs
  • 1 cup heavy cream
  • 1/2 cup shredded cheese (cheddar or Swiss)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Place pie crust in a pie dish and crimp edges.
  3. Blanch spinach in boiling water for 1 minute, then drain and squeeze out excess moisture.
  4. Spread spinach evenly over the pie crust.
  5. In a bowl, whisk eggs, cream, salt, pepper, and nutmeg.
  6. Pour egg mixture over spinach.
  7. Sprinkle shredded cheese on top.
  8. Bake for 35-40 minutes or until set and golden.
  9. Let cool for 10 minutes before slicing.
