Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or fresh
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1 lime, juiced
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  3. In a large bowl, combine black beans, corn, red bell pepper, and avocado.
  4. Once quinoa is cooked, fluff with a fork and add to the bowl with the other ingredients.
  5. Drizzle lime juice over the mixture and sprinkle with cumin, salt, and pepper. Toss to combine.
  6. Serve chilled or at room temperature.

Notes

  • Feel free to add other vegetables like tomatoes or cucumbers.
  • This dish can be made ahead of time and stored in the fridge for up to 3 days.
  • For added protein, consider adding tofu or tempeh.
