Easy Veggie Fried Rice

  • 2 cups cooked rice (preferably day-old)
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 eggs, beaten (optional)
  • Salt and pepper to taste
  • 1 tbsp chopped green onions for garnish

Instructions

  1. Heat vegetable oil in a large pan over medium heat.
  2. Add minced garlic and sauté for 30 seconds until fragrant.
  3. Add mixed vegetables and stir-fry for 3-4 minutes until tender.
  4. Push vegetables to one side, pour beaten eggs into the pan, and scramble until fully cooked.
  5. Add cooked rice and mix everything together.
  6. Pour soy sauce and sesame oil over the rice. Stir well to combine.
  7. Season with salt and pepper to taste.
  8. Garnish with chopped green onions and serve hot.

Notes
