Fig Walnut Yogurt Cupcakes are a delightful and unique treat that combines the sweetness of figs with the crunch of walnuts, all held together by a moist yogurt base.

  • 1/2 cup granulated sugar
  • 1/2 cup plain yogurt
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chopped fresh figs
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix the yogurt, melted butter, and eggs until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Fold in the chopped figs and walnuts gently.
  6. Divide the batter evenly among the cupcake liners.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For a sweeter cupcake, you can increase the sugar to 3/4 cup.
  • These cupcakes can be stored in an airtight container for up to 3 days.
  • Feel free to substitute dried figs if fresh ones are not available.
