  • 2 (8 oz) filet mignon steaks
  • 2 tbsp whole black peppercorns, coarsely crushed
  • 1 tsp salt
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1/4 cup brandy or cognac
  • 1 cup heavy cream
  • 1 tsp Dijon mustard

Instructions

  1. Press crushed peppercorns onto both sides of the steaks and season with salt.
  2. Heat olive oil and 1 tbsp butter in a skillet over medium-high heat.
  3. Sear steaks for 3-4 minutes per side for medium-rare. Remove and set aside.
  4. Reduce heat to medium and add brandy. Simmer for 1 minute.
  5. Stir in heavy cream and mustard. Cook until sauce thickens slightly.
  6. Return steaks to the skillet and spoon sauce over them. Serve hot.

Notes

  • Use a meat thermometer for precise doneness (130°F for medium-rare).
  • Let steaks rest for 5 minutes before serving.
  • Substitute beef broth for brandy if needed.
