  • 1 cup oat flour
  • 1 scoop vanilla protein powder
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1 ripe banana, mashed
  • 1/4 cup almond milk
  • 1 egg
  • 1 tbsp honey
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with liners.
  2. Mix oat flour, protein powder, baking powder, and cinnamon in a bowl.
  3. In another bowl, combine mashed banana, almond milk, egg, honey, and vanilla extract.
  4. Pour wet ingredients into dry ingredients. Stir until just combined.
  5. Divide the batter evenly into the muffin liners.
  6. Bake for 15-18 minutes or until a toothpick comes out clean.
  7. Let cool before serving.

Notes

  • Store in an airtight container for up to 3 days.
  • Substitute almond milk with any milk of your choice.
  • Use a nut butter drizzle for extra flavor.
