Fluffy protein pancakes are a delicious and nutritious breakfast option packed with protein to keep you energized throughout the day.

Ingredients

  • 1 cup oat flour
  • 1 scoop vanilla protein powder
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 egg
  • 1/2 cup almond milk
  • 1 tbsp honey
  • 1 tsp vanilla extract
  • 1 tbsp coconut oil (for cooking)

Instructions

  1. In a bowl, mix oat flour, protein powder, baking powder, cinnamon, and salt.
  2. Add egg, almond milk, honey, and vanilla extract. Stir until smooth.
  3. Heat coconut oil in a pan over medium heat.
  4. Pour 1/4 cup batter for each pancake. Cook until bubbles form on top.
  5. Flip and cook for another 1-2 minutes until golden.
  6. Serve warm with toppings of your choice.

Notes

  • Adjust almond milk for desired batter thickness.
  • Substitute honey with maple syrup if preferred.
