A light and fluffy vanilla sponge cake, perfect for any occasion.

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 cup milk
  • 2 tsp vanilla extract
  • 2 tsp baking powder
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a bowl, cream the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Stir in the vanilla extract.
  5. In a separate bowl, sift together the flour, baking powder, and salt.
  6. Alternately add the dry ingredients and milk to the butter mixture, starting and ending with the dry ingredients.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • For best results, ensure all ingredients are at room temperature.
  • Do not overmix the batter to keep the cake light.
  • You can add a dusting of powdered sugar or frost with vanilla buttercream.
