Foraged Ramp and Asparagus Tart

A delicious tart featuring foraged ramps and fresh asparagus, perfect for springtime gatherings.

  • 1 sheet of puff pastry
  • 1 cup of foraged ramps, cleaned and chopped
  • 1 cup of asparagus, trimmed and cut into 1-inch pieces
  • 1 cup of ricotta cheese
  • 1/2 cup of grated Parmesan cheese
  • 2 large eggs
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry and fit it into a tart pan.
  3. In a bowl, mix the ricotta, Parmesan, eggs, salt, and pepper until well combined.
  4. Spread the cheese mixture evenly over the pastry.
  5. Top with the chopped ramps and asparagus pieces.
  6. Drizzle with olive oil.
  7. Bake for 25-30 minutes or until the pastry is golden brown and the filling is set.
  8. Let cool slightly before slicing and serving.

Notes

  • Foraged ramps can be substituted with green onions if unavailable.
